He was probably right, because I’m cooking that slab of salmon on my Presto griddle that doesn’t quite fit on my counter, at 10:30 at night. Yeah, he was right.
Why cook salmon on a Presto griddle? Two reasons:
1. It fits.
2. Nice even heat gets you beautiful crispy skin without a ton of oil.

I don’t like salmon, but I stumbled across this easy recipe for grilled salmon with key lime butter and made it for friends. They raved about it. Apparently simple is best.
What’s that rub you put on it?

Ever made salmon patties? Use a food processor and grind up salmon, quinoa, feta, a bit of egg, and kale. Cook them like a latka and eat them whenever. Throw some sriracha or wasabi on them if that’s your thing.

Put it in a smoker, and I be all over it. We just started cold smoking salmon at work, and it is amazing.

Salt, pepper, garlic powder, coriander and Old Bay. Kinda sounds like a lot but it’s just a light sprinkle of each.

1) must be wild caught Pacific or Alaskan, otherwise it’s “farm bred” that’s been fed dog food and injected with dye.

I did that, buy the whole side of the salmon once, for a dinner party I was hosting. The guy at the store asked me which piece I would like. I said the big one. He started grabbing the largest cut piece from the display. I stopped him and said “No, the BIG one.” He thought I was crazy. He had problems weighing and wrapping it.

Salmon heated in the toaster oven is da bomb. When we have salmon for supper, I always overbuy for just that reason.
